Harvest is finally coming to an end. Phew! We received the last of the Cabernet the week before last, and it went dry early this week. This vintage has been long and intense, but the fermentations went remarkably well despite the increased production. The fruit generally came in colder than in past vintages, which really helped with temperature control. In previous years, the fermentations tended to take off really quickly, so we were scrambling to keep them cool. This vintage, we had long pre-ferementation macerations followed by steady fermentation processes. We’ve been dong shorter post-fermentation maceration as a result. The new wines are looking great–good color, ripe flavors, nice structure. We’ll press out the final lots of the Cabernet and Petite Sirah this weekend, then work on moving it into the new cellar. It’ll be nice to have access to the house again.
